This history of the European Colonial Empires is a pretty long one, it started in the medieval period and ran into the 20th century. If you ignore the remnants of them like the British Overseas Territories.

It started off with the Portuguese in North Africa, taking Ceuta in the 15th century (it's still a part of Spain) and peaked with Britain having an empire spread across the whole globe. So there is plenty for historians to get stuck into. You can find books about specific empires, like the Spanish Empire, or specific bits of an Empire, like British India. There are also a few very broad histories which cover a lot of ground.
